Redeemer is a fresh spun concept straight from the pasta apostles behind sister restaurant Dio Mio, chefs Spencer White and Alex Figura, who both share a rather nerdy approach to items of the gluten variety. It started with pasta... Then there was a bread chapter (prior to the one many of you embarked on in the midst of dumpster fire we know as 2020)… which then snowballed into an all-out obsession with naturally-leavened sourdough pizza. So here we are… INTRODUCING: Redeemer!

 

WELCOME TO DENVER’S NEW PIZZA CHURCH.

 

In a lot of ways, pizza does save. Whether it’s satiating a midday craving, sitting down for a pie before a big night out, scooping up some to-go pizzas for a gathering at home, or feeling alive again after a late-night slice, pizza is there for all occasions.  Even the ones where it’s you, your couch, and no judgy eyes. 

Redeemer serves whole pies, slices, and hoagies. It’s a spot for chilling out with some drinks, grab & go, and after hours munchies. Enjoy natural and biodynamic wines, creative cocktails, cold beer, and large format bottles by request. From a few slices of cheese alongside crisp, cold lagers, to seasonal pizza featuring unique toppings enjoyed with the latest orange wine, Redeemer has you covered.

True believers know that pizza is an institution, not a sloppy side project. We’ve developed a high-hydration naturally-leavened dough that enjoys a long fermentation process (minimum of 72 hours in fact), which yields slices without a side of gut bomb (you’re welcome). It’s our belief that good dough makes way for good times, not food comas.

Redeemer is a robust-flavored winter wheat that we stumbled upon during our explorations in flour at Dio Mio. Each pizza features fresh, in-house milled hard wheat. We’re committed to using the best ingredients we can source, as locally as we can source them. Seasonal and sustainable is our mantra, so you’ll find a lot of Colorado meats, local veggies, and thoughtfully sourced beverages when you pop into Redeemer.
